No Bake Chia Oat Cookies
Serves: 16 | Prep Time: 5 mins | Total Time: 15 mins + 1 hr chilling time
These no-bake cookies can be customized to include any extra toppings of your choice!

| 360 g (11⁄2 cups) soy nut or seed
butter (sunflower, pumpkin, etc.)
1. Place the soy nut or seed butter (sunflower, pumpkin, etc.),
honey and vanilla in a bowl.
| 30 ml (2 tbsp) honey or maple syrup
2. Stir the mixture until well combined, then add in the
remaining ingredients.
| 10 ml (2 tsp) vanilla extract
| 20 ml (4 tsp) chia seeds
3. Stir well and ensure everything is well incorporated.
| 135 g (11⁄2 cups) oats
4. Roll the mixture into 16 balls and place the balls on a baking
tray lined with parchment paper.
EXTRAS
5. Press the balls flat slightly and place them in the fridge for
at least an hour.

Store in fridge in an airtight container.
