Breakfast Burritos
Serves: 16 | Prep Time: 5 mins | Total Time: 20 mins
These burritos are perfect to incorporate more vegetables into the first meal of the day.
Ingredients

| 8 eggs, lightly beaten
1. In a pan, cook the eggs with the butter or oil, stirring
constantly, until the eggs are slightly runny (about 3 minutes).
| 10 ml (2 tsp) butter or cooking oil
| 16 handfuls of spinach
| Salt and pepper, to taste
| 115 g (1 cup) shredded cheese
| 90 ml (1/3 cup + 1 tbsp) chopped
bell peppers
| 16 mini whole grain tortillas
2. Add spinach and cook until wilted.
3. Remove from heat and season with salt and pepper.
4. Fold in half of the cheese and the chopped peppers.
5. To build the burritos, divide the mixture among the centre of
the tortillas and top with the remaining cheese.
6. Fold up the bottom third of the tortillas, fold the ends in towards
the centre and continue rolling to a small cylinder shape.
7. Serve immediately.

for regular sized whole grain tortillas for a heartier
breakfast.
